Just as the name suggests, at Original Fusion you can expect a tasteful blend of flavours, ingredients and cooking techniques that you won’t normally think of combining. The ambition behind the restaurant, that also has a roof terrace and a lounge, is to sprinkle western flavours and concepts with a little magic from the Gulf.
Its halwa cheesecake is one such indulgent product you will find on the menu. The camel ravioli with truffle, is another. But, for us, the standout is the impressive Wagyu short rib. A dish that seems to have nailed the fusion concept. And it’s not an easy thing to achieve. First, high-quality Wagyu beef is braised for four hours, in an aromatic beef jus infused with a mix of traditional Emirati spices. The slow cooking process ensures the meat is tender and falls apart with ease when you push your fork through it. To plate up, the ribs are laid over a bed of smooth smoked potato puree. Sautéed mushrooms, caramelised baby onion and black garlic flakes are used to garnish it, before the flavour-packed jus is spooned around the meat and potatoes.
