Dish of the week: Red Mullet at Larte

There are plenty of picture perfect sights to marvel at in the capital’s fast-expanding cultural district of Saadiyat Island. Yet the works of art aren’t just adorning the walls of Louvre Abu Dhabi, they can also be found taking pride of place at Manarat Al Saadiyat, and now at its new eatery, LARTE, a place where you really drink in (and eat) the culture.

On the menu is this main course masterpiece, which Italian chef Lorenzo Pagliaro has crafted. It’s red mullet, with carrot puree, orange and crunchy artichoke.

The artfully presented creation is full of Italian inspiration – with a dash of London life thrown into the mix.

Pagliaro explains that he came up with the recipe while on a relaxing winter walk through the English capital’s famous foodie spot Borough Market. He was living in London at the time and was looking for inspiration for a dinner party he was hosting. “I wanted to create something vibrant and flavourful with seasonal vegetables,” he says. “Red mullet is such a versatile fish, so I played with different textures and added in the orange segments to give the dish a Southern Italian twist

The globe-trotting guru says the different textures and flavours of the ingredients at play – the crunchiness of the artichokes, the sweetness of the carrots, the freshness of the orange and the crispy skin of the red mullet – come together to make a perfectly balanced dish, and we’re inclined to agree.

There’s a lot to feast your eyes on at Saadiyat and at LARTE you get to taste it, too.
