Italian fans have another delicious reason to rejoice, Sofitel Abu Dhabi Corniche has announced the opening of its newest restaurant.

Parmigiana will serve modern interpretations of classic dishes, such as the eponymous aubergine dishes that hides underneath a layer of tomato sauce and parmesan. According to sweet old nonnas, the name parmigiana is derived from the Sicilian word palmigiana, which translates to shutters, because the layered eggplant slices resemble the thatched roofs of Sicilian beach houses.

But we digress.

The menu at the new casual eatery includes all the usual suspects -- fritto misto, minestrone, porcini risotto, lasagne, Margherita quattro formaggi pizza, chicken cacciatore and of course parmigiana di melanzane, And since no Italian meal would be complete without something sweet, Parmigiana’s list of dolci includes tiramisu, pannacotta and gelato.
