Park Hyatt Abu Dhabi Hotel’s Masters of Food & Grape (MOFW) – the series that gives discerning diners a chance to engage with top-line chefs and experts – is back for its first event of the year.

For this series, the hotel has invited Spanish chef Senén González to take the city’s foodies on an insightful exploration of his beloved home-country cuisine.

González is a creative mind and loves to find innovative ways to present traditional recipes he has grown up with. He is well-known for the delectable selection of pintxos and tapas that he serves at his restaurant, Sagartoki, in his hometown of Vitoria-Gasteiz in the Basque Country. His signature offering on the menu, and one of the tapas he will showcase at MOFW, is this Mediterranean sushi (pictured above) – his take on the classic Japanese dish. “I looked at Oriental cooking, with the intention to adapt it to Mediterranean flavours,” he tells us.

González uses paper-thin sheets of veggies as a substitute for the nori. They can be made from different vegetables, such as potato, beetroot, spinach and carrot. After that, the steps of construction are the same as traditional sushi, but he omits the rice and the ingredients used are very different. Red Sicilian prawns, smoked sardines and foie gras, for example, are his preferred fillings. González also plans to infuse local Arabian spices and produce into his masterful creations at the event.
